Why so much noise about single sign on, when it's simply possible to accomplish through cookies and then be used by
many applications,platforms?

For the most part you're right, I think people just want a standard to enable better interoperability. Right now there are a lot of in house solutions to this problem that only work with one companies web apps. For instance a standard would make it easy for me to write an application, get together with your existing application and begin to share our user sessions. A standard would also mean that different toolsets and application / web servers would be able to support it. That's why SAML and things like that will probably be more important in the future. Unless you want to use Passport that is! :)
