1. When I send an email from my email client - is it possible for me to crack open the email before it reaches the end user, extract the text out of it and resend the email?

If so how, please be elaborate. I believe the email is send over SMTP Is it stored somewhere before it is passed on to the intended user?

Can I use javamail API to do this?Please give pointers to resources.
