Building Manifest Files For .jar

I am trying to build a jar file for my project and I am having trouble creating my manifest file. I have opted to build it dynamically using an echo command. I don't know if there is a better way to do it or not. My problem comes in because I create the file, then append the line for Main-Class: and new line character isn't generated. Thus everything gets spread out onto one line. I would appreciate any suggestions on how people build their manifest files for their jars.
