How can I get international unicode characters from a form input field (text field in html i.e.) into a string?

A little more information is needed (e.g. are you using a JSP).

  1. One of the best things to start with is to ensure that the HTML page is in UTF-8, to enable multilingual display, and, for many browsers to set the default posting fo data to be in UTF-8.

  2. Then, make sure that the receiving application is expecting UTF-8 data.

This will give you a fighting chance of dealing with text from anywhere.

Encode the page with the form in it in UTF-8. When the jsp receives the data make sure that it UrlDecodes the query string in UTF-8.

I'm only guessing, but you should probably start by making sure that both the JSP/HTML and the server are using a suitable encoding/charset. AFAIK, the user agent is supposed to respect the encoding of the input page when sending data over to the server. A quick search turned up this article on java.sun.com.
