Are there any resources (books, articles, etc) out there on how to make the most of Apache Software Foundation in J2EE projects?

Their are lots of books on the Apache projects. Look at the O'Reilly range. These cover most of the Apache projects (both Java oriented and otherwise). Alternatively, search on Amazon for specific projects (Tomcat, Xerces, Xalan, Cocoon, James etc.).
