You have two obvious options; there may be more:
- Use the SyslogAppender and log everything to a central machine using syslog
- Use a JDBC appender to log everything to a database
This will solve your 'central place' problem in a clustered environment. However, this raises issues of logging over the network, or, in the case of the JDBC appender, hitting your database a lot.
